Road-Tested Recipes, Vol. I

Hello, friends! Sorry for the lull of activity around here–my computer’s power cord has bitten the dust and I have to wait a little while (*cough* til payday *cough*) until I can access all my recipe notes and photos and such. Stay tuned for pierogis, baked brie, and more!

In the meantime, I thought it might be fun to share some links to recipes I’ve road-tested for you! These are all dishes I’ve made and loved. I usually tweak recipes just a touch as I go, but each of these are recipes I didn’t mess with at all. Kate-tested, foodie-approved!

  1. Indian Butter Chicken from Mel’s Kitchen Café
    Nate made this for dinner one night and we’ve been hooked ever since! Butter chicken is one of my favorite Indian dishes. It’s slightly sweet and only a touch spicy, which is perfect for total wimps like me. :) I like this recipe because it’s so easy to make. We love it with lemon and cilantro on top!
  2. Apple Cider Baked Chicken from Gimme Some Oven
    We made this dish with chicken thighs since they’re so inexpensive. Because you marinate the chicken in the cider, everything comes out so flavorful. This was a really fantastic recipe. I highly recommend it! (Use the leftover cider to make mulled wine!)
  3. Finnish Potato Flatbread from Scandi Home
    We made this for a Scandinavian food potluck and it was a huge hit! I whipped up a little dill butter to go with the bread by mixing dried dill right into room temperature butter. This is a really easy bread to make and it tastes delicious!
  4. Swedish Almond Cake from Living History Farms Blog
    Someone brought a Swedish almond cake to the same Scandinavian food potluck and I absolutely fell in love. This is such a simple cake, but if you like almond flavor, you’ll go crazy for it. The gal who brought it to the potluck served it with fresh whipped cream on top and I wanted to eat the entire thing! I tried making it from this recipe and was really happy with how it turned out.
  5. Sourdough Chocolate Cake
    Last year, while I was bogged down in revisions of my graduate thesis, Nate surprised me with sourdough carrot cake one night. We’ve been hooked on sourdough cakes ever since! This chocolate one is to die for. It’s rich and moist and slightly tangy from the sourdough.
